Stuffed Bell Pepper With Quinoa and Egg
- 1 Medium Bell Pepper
- 2 Eggs
- ⅔ cup cooked Quinoa
- Fill bell pepper ⅔ full with cooked quinoa and add egg.
- Pour ⅓ cup water in deep dish tray and place stuffed peppers.
- Cover with foil. Cook at 400˚F 20-25 minutes.
- Season with sea salt and black pepper.
Quick tip when cooking quinoa - ½ cup cup quinoa and 1 cup water. Bring to boil and turn on low. Cover 15 minutes. You can also use chicken stock for more flavor.
