I am having major Disney Cruise withdrawals and I’m especially missing all the amazing food we ate. In my attempt to keep the magic alive I am recreating some of my favorite meals I had during our Disney Dream Cruise Vacation. I made a Cucumber Vegetarian Spring Roll, it’s my take on The Enchanted Garden’s Cucumber Garden Roll appetizer. The image from below is my plate that night taken with my phone. The original dish came with a miso sauce, I opted with making peanut sauce. I got really lucky and had the opportunity to speak to one of the chefs about the recipe. I asked how he made all the vegetables so pliable without cooking it. He said he soaked it all in a miso sauce overnight, which was partially pickling the vegetables. I did something similar with a little rice vinegar, apple juice, sesame oil and water. He also suggested slicing the cucumbers as razor thin as possible, for that used a mandolin slicer. My all time favorite item I had aboard the Disney Dream was the Caramelized Sea Scallops with Roasted Asparagus and Sun-Dried Tomato Cous-Cous. I have it for my next recreation so stay tuned for that. The Disney Dream Cruise Menu had something for everyone, and don’t get me started on the 24 hour room service. Lets just say my kids were ordering buffalo wings and sundaes at midnight.
Julienne Red Peppers, Carrots and Broccoli Stems
Rice Wine Vinegar, Apple Juice, Sesame Oil, Water and Sugar
Soak Julienne Vegetables for 2 hours and drain liquid
Slice Cucumber with Mandolin and soak in Marinade. Soak in separate dish to not discolor cucumbers.
Drain liquid, lay all vegetables on towel and pat dry with paper towels
Layer sliced cucumber and add mixed vegetables. Gently tuck and roll
- 2 large cucumbers
- 1 red bell pepper
- 2 carrots
- 3 broccoli stems
- ½ cup rice vinegar
- 3 tbsp. sesame oil
- ½ cup water
- ⅔ cup apple juice
- ½ tbsp. sugar
- Julienne carrots, bell peppers, broccoli stems.
- Slice thin slices with cucumber with a mandolin slicer.
- In large bowl whisk together rice vinegar, sesame oil, water, apple juice and sugar. Pour ⅓ into a separate bowl. Add julienne vegetables in larger bowl to marinade and sliced cucumbers in separate bowl. Marinade for 2 ours.
- Drain liquid and lay all vegetables on towel. With paper towel absorb the remain liquid
