Spinach Dip with Sweet Potato Slices
- Thinly sliced 1 whole sweet potato
- 1 ½ tablespoon of olive oil
- 1-teaspoon salt
- ½ cup low fat cottage cheese
- 2 tablespoons of low fat cream cheese
- 2-3 cups sautéed spinach, squeeze excess water
- Salt and pepper for taste
- In a bowl add sweet potato, oil and salt.
- Mix well until oil coats evenly on each slice.
- Bake 375˚ for 25-30 minutes
- Mix cottage cheese, low fat cream cheese, spinach together for the dip.
