This Healthy Avocado Egg Salad will take your lunch to the next level! Egg salad sandwiches remind me so much of my childhood, but you know I have to make a healthy updated version for my twin girls. By adding avocado to the egg salad, you get more nutritional benefits like healthy fats, fiber for digestion, and potassium for sore muscles. My girls could use all the potassium they could get since it’s now soccer season!
Aside from the added nutrition in my Healthy Avocado Egg Salad, I also updated my process in making this and I’m kind of obsessed with these hacks. First, to get the perfect boiled eggs, make sure to drop them in an ice bath to make peeling so much more easy. My husband was jealous of how perfect my eggs peeled compared to how he does it!
But here’s the part that made this Healthy Avocado Egg Salad recipe quick and fun: I used a cookie cooling rack (affiliate link) over a bowl to prep my eggs and avocado. If you have little ones who want to help out in the kitchen, this is the perfect recipe for them. Chopping up eggs is always a messy situation, but when you smash them through the rack into a bowl, is super easy, and not to mention extremely satisfying. I did the same for the avocado, and yes, it was a little messy, but that adds to the fun!
For additional protein, you can add a medium boil egg to the center of the sandwich. 7 minutes will get you the perfect medium boil for this sammy, and I used an ice cream scooper to impress some space for the egg to go. Cutting into the sandwich gave the perfect amount of yolk to ooze out and give it even more flavor and texture.

- 4 hard boiled eggs
- 1 avocado
- ¼ cup diced red onions
- ¼ cup avocado mayo or regular mayo
- 1 tsp. salt
- 1 tsp. black pepper
- ½ tsp. paprika
- Boil eggs for 10-12 minutes for a hard boil
- Dice eggs and avocado and place in a large bowl. Mix in red onions, avocado, salt, pepper and paprika.
- Serve with sliced bread.
- Optional is to medium boil eggs at 7 minutes to add to center of sandwich.
