Eggplant Pizza

Ingredients
- 1 eggplant
- 4-6oz's mozzarella cheese
- ½ cup tomato sauce
- 2 tbsp. Parmesan cheese
- 1 tbsp. chopped basil
- ½ tsp. dried oregano
- a hand full of grape tomatoes
- 2 tbsp. olive oil
- ½ tsp. salt
- ½ tsp. black pepper
Instructions
- Pre-heat oven to 400˚F degrees
- Place parchment paper on cooking sheet
- Slice eggplant one inch thick and place on cooking sheet
- Brush each slice with oil on both sides
- Bake for 15 minutes in the oven and remove to cool
- spread a little tomato sauce on top
- sprinkle with oregano, salt and pepper
- place a little mozzarella, Parmesan, sliced tomatoes and basil
- Bake for another 10 minutes
