It’s Memorial Day Weekend and what better way to celebrate than with my Cilantro Lime Corn? Every Summer I come up with a different corn recipe because it’s my favorite vegetable. Corn is definitely in season now because I was able to purchase corn for thirty three cents each! It’s a great appetizer for your party or  you can make and bring as your pot luck dish. The sweet corn has a crisp bite to it, the lime adds a tang and the cilantro leaves a fresh taste. I topped my corn off with a little Cotija cheese for a umami flavor. You know I’m for sure making my Cilantro Lime Corn again for my Monday BBQ. I recommend serving my Cilantro Lime Corn with my bbq bulgogi chicken and sweet potato salad. My kids loved this so much, they skipped dessert and opted for more corn. Hope everyone enjoys their Memorial Weekend with good food and friends.

Ingredients
  • 4 ears of corn
  • ½ cup Cojita Cheese crumbles
  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 1 lime
  • ¼ cup chopped cilantro
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. paprika
Instructions
  1. Cut the corn ears into 3-4 equal sections.
  2. In large pot boil corn sections for 5 minutes. Drain and add corn back into pot with olive oil. Cook on medium heat for 5 minutes, continually stirring he corn to cook evenly. You are looking for some light brown coloring on some parts of the corn to give it a different flavor profile. Add butter, salt, pepper, paprika, lime juice and cilantro. Cook for 1-2 more minutes and remove from heat. Top with Cojita Cheese crumbles.
