I first got inspired to make my Cilantro Lime Brown Rice when I tried the white rice version at Chipotle. It is one of my favorite go to places for a quick meal, but I know it’s high in calories and sodium. By making my own Cilantro Lime Brown Rice, I know exactly what ingredients are in them and I can control the amount of fat and sodium. Not to mention it’s a lot cheaper if you make food at home. I of course always have to make my own twist and added a little Asian influence by making a fried rice version. I guess you can call it a Mexican and Asian fusion cuisine. I’m kidding, I always make some kind of concoction of fried rice from left over rice. Believe me, there’s always leftover rice in this Asian household. You can eat Cilantro Lime Brown Rice on it’s own, but I had it with leftover seasoned ground turkey that I used for the Wonton Tacos recipe and it was great together!

Cilantro Lime Brown Rice
- 2 cups cooked brown rice
- 1 tbsp. avocado oil
- 1 tbsp. minced garlic
- ⅓ cup diced onions
- 1 egg
- ½ tbsp. soy sauce
- 1 tbsp. lime juice
- 1 tbsp. sesame seeds
- 2 tbsp. chopped cilantro
- In large skillet heat up oil to medium heat, then add garlic and onions. Cook for 3-4 minutes stirring occasionally and then add cooked brown rice. Cook for 1-2 minutes to heat up the rice and then add whisked egg. Continuously and gently stir the egg and brown rise together until egg is fully cooked and not wet or runny, about 3-4 minutes. Add sesame seed, soy source, lime juice and cilantro, cooking for another minute.
