I first came up with the idea of Cheesy Pull Apart Cauliflower after seeing my sister in law make cheesy pull apart bread. It look so good when I saw it on her Instagram page, but I knew it was too much calories and unhealthy. What made it unhealthy is the empty carbs from the white bread. It didn’t take long for me to figure out a healthy swap for bread would be cauliflower. Everyone is making cauliflower pizza, bread, rice etc… After doing some research and recipe testing at home I finally perfected my Cheesy Pull Apart Cauliflower. The main trick and cutting a lot of time is simmering the whole head of cauliflower for 5-10 minutes. This process fully cooks the cauliflower and makes it more pliable when inserting cheese. Make sure you drain the cauliflower fully in a colander before inserting cheese. This dish can be a main course or a shared appetizer.
- 1 head of cauliflower
- 4oz mozzarella cheese
- ⅓ Panko crumbs
- ⅓ cup grated Parmesan cheese
- 2 tbsp. olive oil
- 1 tbsp. crushed garlic
- 1 tbs. chopped parsley
- ¼ tsp. salt
- ¼ tsp. black pepper
- Boil water in large pot, bring down to simmer and add whole cauliflower. Simmer for 5-10 minutes. Drain in Colander and allow to cool for 10 minutes.
- In small bowl mix Panko, parmesan, olive oil, garlic, parsley, salt and pepper.
- With a small paring knife cut small crevices all around cauliflower. Stuff small cubes of mozzarella in crevices and rum Panko mixture all around the cauliflower.
- Pre-heat oven at 400˚F degrees and bake for 15 minutes.
