Cheesy Cauliflower Mash
This was a fun recipe that I did on the fly during my live Periscope video. I was making for my dinner guest, but it turned out so delicious that I had to share on my blog. You can use any color cauliflower you like, but I like orange because it just made it look more cheesy! I think this is a great recipe for the kids too. Recipe type: Cheesy Cauliflower Mash
- 1 head of Cauliflower, I used orange cauliflower
- ¼ cup shredded cheese
- ¼ parmesan cheese
- 2 tbsp. butter
- ½ tsp. black pepper
- Cut up cauliflower into 6-8 sections and boil for 15 minutes. Drain well and microwave for 1 minute to dry more. If you have cheese cloth to squeeze moisture out that will work well too. Add butter, cheese, parmesan cheese and black pepper. Take potato masher and mash really well. That's it! It's really easy and delicious. I put it in these foil pot pie containers, sprinkled a little more cheese and baked for another 5 minutes.
