Ingredients
  • 8 Slices of whole grain bread
  • 8-10oz of mozzarella cheese
  • 2 tomatoes
  • handful of fresh basil
  • 3 tbsp. olive oil
  • 1½ tbsp. balsamic vinegar
  • 1 tsp. salt
  • 1 tsp. black pepper
Instructions
  1. In small mixing bowl whisk together 1½ tbsp. olive oil and 1½ tbsp. balsamic vinegar. Brush mixture on two slices of bread. On one slice of bread dd sliced tomato, mozzarella and fresh basil. Brush with more olive oil and balsamic and sprinkle with salt and pepper. Top with second slice of bread. Brush olive oil in a non-stick pan and heat to medium low, add sandwich and cook on both sides for 2 minutes. Repeat with remaining bread.

I know everyone has had a classic grilled cheese sandwich, but have you ever tried a Caprese Grilled Cheese Sandwich? One of my struggles as a parent is finding meals that the kids will eat, but something I would enjoy. There has been times where I would make mac and cheese for the kids and separate pasta dish for myself and husband. It doesn’t happen that often, but I wanted to find a meal that we all could enjoy so I started getting more creative. I played with a lot of our favorite meals and did a hybrid of them. One was a Caprese Grilled Cheese Sandwich. Full disclosure my daughter Shayna did pick out the fresh basil, but I still count that as a win. We all were able to enjoy the cappers grilled cheese sandwich with one minor alteration and I didn’t feel like a short oder cook.
