Baked Parmesan Crusted Salmon

My baked parmesan crusted salmon was a test recipe for my picky eater. At the time the only protein she would eat would come from chicken nuggets. Although I made my own chicken nuggets and snuck in healthy ingredients like milled flaxseed, it was still frustrating. I came to the conclusion one day that she really like the texture and crunch of the nuggets so I experimented with salmon nuggets. She loved them! Then I moved on to what is now my baked parmesan crusted salmon and she actually eats it! She still loves chicken nuggets, but at leas she likes my salmon. I love making it for dinner because it’s a recipe everyone can eat. This saves time because sometimes I have to make something different for her or make adjustments.

 

Baked Parmesan Crusted Salmon

Ingredients
  • 2 large salmon fillets
  • 1 cup of panko crumbs
  • ½ cup of grated parmesan cheese
  • 1 tbsp. dried oregano
  • ⅓ tsp. salt
  • ⅓ tsp. black pepper
  • 2 tbsp. olive oil
  • 1 lemon
Instructions
  1. In a large bowl mix panko crumbs, parmesan cheese, dried oregano, salt and pepper. Brush salmon fillets with olive oil and dip into panko mixture. Completely coat and pack crumbs tight. Place salmon on cooking sheet with sliced lemon. Pre-heat oven to 400˚F degrees and bake for 20 minutes.
  2. Serve with baked broccoli and cauliflower. Squeeze some lemon juice when ready to eat.
