- 8oz uncured nitrate free turkey bacon
- ⅔ cup all purpose flour
- ½ cup oat flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup milk
- 3 tbsp. melted butter
- 2 eggs
- In large bowl add flour, oat flour, baking powder, salt, milk, melted butter and eggs. Whisk until smooth. Pre-heat skillet to medium high heat and spray with non-stick oil. Dip turkey bacon into batter, make sure it's completely coated. Place on skillet and cook 3 minutes on each side or until golden brown. Repeat with remaining batter.
- Serve with maple syrup.

The trick is to have the batter consistency slightly thicker than your typically pancake batter. I achieved this by swapping out some flour with oat flour and adding less milk. I made the oat flour by blending oats in my food processor, but you can also buy it already done. You can also use regular bacon, but be sure to cook before dipping in batter. Another tip when buying turkey or regular bacon is to choose nitrate free.
No need for a fork and knife for this breakfast. Just take a piece of your turkey bacon pancake and dip it in warm maple syrup. I even served this with hard boiled eggs and fruit so everything would be utensil free. Sometimes it’s just fun to eat with your hands and get a little messy.
