I first got inspired to make my Simple Thai Chicken Lettuce Wraps after a trip to The Cheesecake Factory. I ordered the Chicken Lettuce Wraps and it was delicious. Automatically, I thought of ways I could make it healthier and easier. In my Simple Thai Chicken Lettuce Wraps I doubled up on the vegetables and used 99% lean ground chicken. Instead of a dipping sauce, I made sure my chicken and vegetables were packed with flavor. The crisp of the butter lettuce with the sweet and savory chicken and cooked mushrooms was a perfect combination.

Ingredients
  • 1 pound lean ground chicken (99% lean)
  • 2 heads of butter lettuce
  • 1 cup sliced shitake mushrooms or button mushrooms
  • 1 cup shredded carrots
  • 1 8oz can water chestnuts (roughly chop)
  • ¼ cup sliced green onions
  • 2 tbsp. hoisin sauce
  • 2 tbsp. sesame oil
  • 1 tbsp. minced garlic
  • ⅓ tsp. salt
  • ⅓ tsp. black pepper
Instructions
  1. In large wok or pan heat up sesame oil to medium high heat. Add ground chicken and garlic and cook for 5 minutes. Then add shiitake mushrooms, carrots, water chestnuts and green onions. Cook for another 5 minutes. Season with hoisin sauce, salt and pepper. Allow to cool before scooping to butter lettuce. Wrap in roll. Pro tip, double up on the lettuce leaf so it doesn't fall apart.
