Creamy Lemon Garlic Chicken

My Creamy Lemon Garlic Chicken is a go to recipe during the week because it’s so simple and quick to make. With only a handful of ingredients and about 20 minutes, you can have dinner on the table. I used chicken thighs, but you can also use chicken breast as well. This recipe is also very versatile, you can make it with salmon, shrimp, mussels or even pork chops. This time around I made my Creamy Lemon Garlic Chicken for dinner and I served it over plain pasta. The flavor in the sauce was all I needed for the pasta and didn’t want to take away from the delicious savory chicken. Obviously, it’s all about the sauce!

Ingredients
  • 4-6 chicken thighs
  • 4 cloves of garlic
  • Juice of one lemon
  • 1 tbsp. avocado oil
  • 1 cup chicken stock
  • 1oz chopped parsley
  • 1 tbsp. flour
  • 2 tbsp. butter
  • ¼ tsp. salt
  • ¼ tsp. black pepper
Instructions
  1. In a large pan heat 1 tbsp. avocado oil to medium high heat. Drizzle chicken with remaining olive oil and season both sides with salt and pepper. Sear chicken skin side down for 2-3 minutes or until golden brown. Add ½ cup of chicken stock, crushed garlic and lemon juice. Bring down to medium low heat and cook for another 8-10 minutes or until chicken is done. Remove chicken from pan and melt butter and mix in flour. Pour in remaining chicken stock and stir until sauce thickens. Add chopped parsley and chicken back into pan. Simmer on low for 2 minutes so the chicken and soak up the sauce.
