Butterfly Chicken Breast with Avocado Mango Salsa
I chose to only season the chicken with a little salt and pepper because the salsa gives this dish so much flavor already.

  • 2 chicken breast fillets
  • 1 avocado
  • 1 mango
  • 1 tomato
  • ⅓ cup diced red onion
  • Juice of half a lime
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 2 tbsp. avocado oil
  1. Butterfly your chicken breast by holding a sharp knife along the side of your chicken. Using a sawing motion slice through but be careful not to cut all the way leaving about a inch. Open chicken and season with a dash a salt and pepper. Heat up on to medium high heat and cook chicken 2 minutes then to medium low heat for another 3-4 minutes before flipping chicken. Cook on other side for 5 minutes.
  2. For salsa dice everything, squeeze fresh lime juice and season with a dash of salt and pepper. I had this with a side of sweet potato.
