
My slow cooker low carb chicken soup is ideal for meal prep meals and easy family dinners. It is low carb and high in protein. One of the problems I come across frequently with meal prepped meals is that after the 2nd or 3rd day the chicken in my meals get a little dry. - 2 chicken breast
- 2 large carrots
- 4 celery stalks
- 1 onion
- 2 zucchinis
- 2 roma tomatoes
- 4-6 cups of water
- 1 tbsp. of Better Than Bouillon Roasted Chicken Base
- 1 tsp. salt
- 1 tsp. black pepper
- (you can also substitute chicken stock instead of water if you don’t have Better Than Bouillon Chicken
- In slow cooker add hot water and whisk in Bouillon paste. Add chopped carrots, celery, onions, tomatoes and zucchini. Add chicken breast and season with salt and pepper. Add more water if necessary to reach almost top of slow cooker. Set high for 6 hours. Once chicken is fully cooked remove and shred with a kitchen mixer or with two forks. Place shredded chicken back into slow cooker.
