- 1 pound shrimp peeled and deveined
- ½ cup diced pineapple
- 1oz chopped cilantro
- ¼ tsp. salt
- ¼ black pepper
- ¼ garlic pepper
- 1 avocado
- 1 lime
- 1 tbsp. olive oil
- 6 Romaine lettuce leaves
- In large pan, heat oil to medium high heat and cook shrimp for 2-3 minutes.
- Add diced pineapple and cook for another 2-3 minutes.
- Add cilantro and cook for another 1-2 minutes or until shrimp is fully cooked.
- Season with salt, pepper and garlic powder.
- Slice avocado and wash lettuce leaves.
- Scoop pineapple shrimp into lettuce, add sliced avocado and squeeze a little lime juice.
