I know you’re probably drooling already looking at these Pineapple Shrimp Lettuce Wraps. Everything from the ingredients to the colors to the textures make this recipe drool-worthy. But once you get a taste of this, you’ll not only love the contrast of flavors, you’ll feel good about eating something this good too! This recipe is low-carb and gluten-free, and fits within the keto and Whole30 diets, so why not add this to your meal plan?

Before we talk about the filling in these Pineapple Shrimp Lettuce Wraps, let’s discuss the wrap itself. What makes these wraps low-carb is that we are using Romaine lettuce to hold everything together, instead of the typical tortillas. By using lettuce, we’re making this healthy meal even healthier. Romaine lettuce contains Vitamin C to help fight off colds and boost our immune system, and it also is a good source of beta carotene, which converts to Vitamin A and is helpful for eye health. But what I think is the best about using Romaine lettuce is the texture that you get in each bite. You won’t get that crisp, cool bite from a tortilla!

Now, let’s move on to the star of this dish: the filling! Pineapple and shrimp are a combination made in food heaven because the sweetness of the pineapple pairs so well with shrimp. In fact, it pairs so well that you don’t even need to go wild with seasonings and other flavors in this dish because you want the stars to shine! I simply used cilantro, salt, pepper, and garlic powder to bring out the unique flavors of this ingredients.

The filling in my Pineapple Shrimp Lettuce Wraps make this dish even healthier. Pineapple is loaded with nutrients and contains antioxidants that can help fight disease. It also contains Vitamin C for more immunity boosting powers. Pineapples are also anti-inflammatory, which can help with a number of illnesses. As far as the shrimp, you’re getting a good dose of protein to help build muscles and tissue, and it contributes to heart health because of its omega-3 fatty acid content. Our bodies can’t produce omega-3s on its own, so supplementing with our diet is very important for optimal health.

Since this recipe uses shrimp, it’s something that you can have ready in less than 30 minutes. In fact, the shrimp itself only takes 3 minutes to cook, just about the same amount of time it takes to cook the pineapple. That’s one of the main reasons why I love to use shrimp!

To build these Pineapple Shrimp Lettuce Wraps, I like to add sliced avocado to add more flavor and texture, and to give a dose of healthy fats which can actually help with burning fat! Then just top it off with the pineapple shrimp mixture and add a squeeze of lime juice for some extra flavor and Vitamin C.

My Pineapple Shrimp Lettuce Wraps make a quick and easy weeknight dinner, but you can also make it ahead for your meal plan or lunches. You can eat them hot or cold, so even if you have to take your lunch on the road, you’ll have a healthy and satisfying meal to power you through your day!

Ingredients
  • 1 pound shrimp peeled and deveined
  • ½ cup diced pineapple
  • 1oz chopped cilantro
  • ¼ tsp. salt
  • ¼ black pepper
  • ¼ garlic pepper
  • 1 avocado
  • 1 lime
  • 1 tbsp. olive oil
  • 6 Romaine lettuce leaves
Instructions
  1. In large pan, heat oil to medium high heat and cook shrimp for 2-3 minutes.
  2. Add diced pineapple and cook for another 2-3 minutes.
  3. Add cilantro and cook for another 1-2 minutes or until shrimp is fully cooked.
  4. Season with salt, pepper and garlic powder.
  5. Slice avocado and wash lettuce leaves.
  6. Scoop pineapple shrimp into lettuce, add sliced avocado and squeeze a little lime juice.
