The number one excuse I hear about not being able to stick to New Year’s Resolution is that you don’t have time to make something healthy. Well I’ve partnered with Dole Packaged Foods to show you just how wrong you are, starting with a simple Low Carb Chinese Chicken Salad.

This dish took me less than 20 minutes to make. While the chicken was cooking in the pan, I simpled spiralized my carrots and zucchini, sliced some red peppers and opened a can of Dole Mandarin Oranges.

I then sliced my chicken, drizzled my favorite salad dressing and sprinkled some sliced almonds. My resolution this year is actually to eat more fruit and vegetables and less processed carbs. I know, I know. Sticking to New Year’s Resolutions is tough. So keeping it simple and making sure your food is delicious, nutritious and accessible are key. How easy was it to open a can of Dole Mandarin Oranges to add to our Low Carb Chinese Chicken Salad? Try making double of everything for meal prep and adding your dressing when ready to eat. This will save so much time! Really, no excuses!
- 1 large zucchini
- 1 large carrot
- 1 large red pepper
- 1 can ½ cup Dole Mandarin Oranges
- 1 chicken breast
- ¼ tsp. Salt
- ¼ tsp. Black pepper
- ½ tbsp. Avocado oil
- 2oz sliced almonds
- Season Chicken breast with salt and pepper. In a large skillet heat oil to medium high and add chicken. Cover with lid and cook for 5-7 minutes on each side or until full cooked. Cool for 5 minutes and then slice. In large bowl add spiralized carrots, zucchini, sliced red peppers and chicken. Pour your favorite Asian dressing and mix. Top with Dole Mandarin oranges and sprinkle sliced almonds.
