- 2 egg
- 4 cups spinach
- 1 cup mushrooms
- 2oz grape tomatoes
- 2 tbsp. olive oil
- Boil egg for 10 minutes.
- In large pan heat oil to medium and cook mushrooms for 3 minutes on each side.
- Add Spinach and cook for 1-2 mins.
- Season with a pinch of salt and pepper.
