Salmon ends up on my dinner table at least once a week, and my new favorite way to enjoy it is by making Bacon Wrapped Salmon. I love bacon-wrapped anything, but salmon wrapped in bacon is a whole new level! Even though this may sound too good to be true, the dish doesn’t stop there, because by pairing it with zoodles and fresh cherry tomatoes, it makes the most flavorful and nutritious summer dinners. It’s gluten-free, low-carb, Whole30 approved and keto-friendly, but I like to think that this dish is just so good, you wouldn’t even think about a diet plan.
Making the Salmon
To make my Bacon Wrapped Salmon, it starts with the bacon and salmon. Using 2 pieces of bacon, just wrap it around the salmon, having a slight overlap with each time around. This helps to seal in the juices of the salmon as it cooks, making it a really easy way to cook the salmon too! That’s because you don’t have to worry about the salmon falling apart in the pan…the bacon holds everything together! Just sear it in a pan for 4-5 minutes and you wouldn’t believe how beautiful it is, and how easy it was to cook.
Making the Zoodles
The next few steps for the Bacon Wrapped Salmon require you to act quickly, because you don’t want to overcook the zoodles. Add balsamic vinegar to the pan and make a reduction from the bacon and salmon drippings, and then add zoodles and cherry tomatoes. I was lucky enough to get a never-ending summer supply of cherry tomatoes from my mother-in-law, so finding another way to use them makes me really happy! By using zoodles, this dish is filling and has a great balance with the protein, and it’s low-carb which makes my summer body even happier.
Eating salmon is so important for my family because it gives a good source of Omega-3’s, which our body cannot produce on its own. This essential fatty acid helps with joints, brain, heart and eye health, and by pairing my Bacon Wrapped Salmon with zucchini and tomatoes, we’re also getting a good dose of Vitamin C for immunity and fiber for digestive health. When you find a dish with benefits like that, and flavors and textures that has everyone calling for seconds, you make sure to add it to your meal plan rotation!
- 2 3oz salmon fillets
- 4 strips bacon
- ½ cup cherry tomatoes
- 2 cups zucchini noodles
- 1 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- ⅓ tsp. salt
- ⅓ tsp. black pepper
- Season salmon with salt and pepper and wrap 2 pieces of bacon around each filet.
- In large skillet heat oil to medium heat and cook bacon wrapped salmon 4-5 minutes on each side.
- Reduce heat to low and add balsamic vinegar and cook for 1 minute for it to reduce.
- Add cherry tomatoes and zoodles, cooking for 1-2.
- Remove from pan immediately to not over cook the zoodles.
