- 1 pound shrimp (peeled deveined)
- 1 red pepper (sliced)
- 1 zucchini (sliced)
- ⅓ onion (sliced)
- ¼ cup red curry paste
- 1 can coconut milk
- 1 tsp. Salt
- 1 tsp. Black pepper
- ½ tbsp. Fish sauce (optional)
- 2 tbsp. Coconut oil
- In large pot heat oil to medium heat and add peppers, zucchini and onions. Cook for 3-4 minutes then add shrimp cooking for another 3-4 minutes and remove from pan. Wipe pan clean and reheat to medium low heat. Add coconut milk and mix in red curry paste. Pour in cooked ingredients and mix in salt, pepper and fish sauce.
- Serve over rice.
