
Cilantro Lime Chicken with Mango Salsa
There’s just something so exciting about my Cilantro Lime Chicken with Mango Salsa. Maybe it’s the vibrant colors of the salsa, or maybe it’s the perfectly flavored chicken cooked to perfection. It could be the combination of the fresh and healthy ingredients, or perhaps it’s the fact that it can be made in 30 minutes or less. Actually, I have to admit, it’s ALL of those reasons that make this dish exciting!

Making the Salsa
To get started on my Cilantro Lime Chicken with Mango Salsa, first prep all of the salsa ingredients. This is a great first step because it’s so exciting to work with all this colorful produce and remind yourself of how healthy this dish is. You’re getting a healthy dose of Vitamin C from the mangoes, red bell pepper, and jalapeños, all which will help boost your immune system, which is much needed during this season. Did you know that red bell peppers actually contain 1.5 more Vitamin C than green peppers? If that’s not impressive enough, they contain 11 times more beta-carotene too! That’s a great antioxidant boost to help fight cancer. Beta carotene can also help with healthy vision, and the mangoes also provide a healthy dose. Mix it all up and you’ll probably sneak a taste before the chicken is even made!

Making the Chicken
The seasoning for the chicken is very simple, with paprika, chili powder, garlic powder, and salt. Cook that for 3-4 minutes on each side The real flavors you’ve been waiting for, the cilantro and lime, come in after the chicken is fully cooked. Just add it to the pan and turn off the heat, and let the flavors all marry together. The lime is a great way to deglaze the pan for even more deliciousness.

To complete this dish, you can serve the chicken on top of black beans for some added protein. If you are on a whole30 diet, you can omit the beans since legumes aren’t allowed, but all the rest of the ingredients are whole. Top the chicken with the beautiful mango salsa and you’re done. Give yourself a pat on the back for making a healthy dinner in less than 30 minutes!

You can even meal prep this, and just keep the salsa separated in a different container…that’s if you can prevent yourself from eating it all! I recommend keeping a stash of tortilla chips around if you ever end up with some extra salsa.
- 5-6 chicken tenders
- 1 tsp. paprika
- ½ tsp chil powder
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 oz chopped cilantro
- 1 tbsp. lime juice
- 2 tbsp. olive oil
- For Mango Salsa
- 1 oz chopped cilantro
- 1 cup diced mango
- ¼ cup diced red onion
- ½ cup diced red bell pepper
- 1 diced jalapeno
- 1 tbsp. lime juice
- 1 tsp. salt
- Season chicken tenders with paprika, chili powder, salt and garlic powder.
- In large pan heat olive oil to medium high heat and add chicken.
- Cook for 3-4 minutes on each side or until done.
- Mix in lime juice and cilantro and turn off heat.
- In medium bowls mix mango, red onion, red pepper, jalapeño, cilantro, lime juice and salt.
- Serve with black beans, chicken and top with salsa.
