
Chia Pudding Parfait
I’ve made my fair share of chia puddings, but there’s something about this Chia Pudding Parfait that puts this combination at the top of my list. I love the sweet and tart flavors of the strawberries and blueberries, while the almonds bring some crunchy texture to each bite of the chia pudding. On top of all that, just looking at this Chia Pudding Parfait makes mornings more inspiring because it’s just so pretty!

The berries provide a good dose of Vitamin C, and the almonds and almond milk pack in some protein for the first meal of the day. But the highlight of this parfait are the chia seeds, which are a good source of protein, as well as dietary fiber. If that’s not enough, chia seeds can help lower cholesterol too!
The best way to enjoy this Chia Pudding Parfait is to make it ahead of time. You can even make it the night before, which would make mornings so much more easier because it takes less than 5 minutes to top it all off. If 5 minutes is all it takes for this healthy breakfast, then there’s no reason to skip out on the most important meal of the day.
- 2 tbsp. chia seeds
- ½ cup almond milk
- ½ tbsp. maple syrup or honey
- ½ cup sliced strawberries
- ¼ cup blueberries
- 1oz raw almonds
- In glass add chia seeds, milk and maple syrup. Mix well and let sit in refrigerator for at least 45 minutes. The chia seeds will absorb the milk and expand.
- Top with fruit and almonds
