By now, you have probably seen the viral Baked Feta Pasta, but have you ever seen Baked Feta Potatoes? I’m sure you probably attempted to make the pasta version because of the simplicity of the recipe, because I even decided to play with the recipe myself. I created something different that I think you’ll love, because you really can’t go wrong with potatoes and cheese! It’s a very different recipe than the viral pasta, but the simple steps with the feta flavor is exactly what helps make this recipe so easy and delicious.
Prepping the Potatoes
To make my Baked Feta Potatoes, I used Baby Yukon Potatoes so that you can have bite-size pieces to enjoy. I boiled them first and then smashed them in a baking dish, which adds a fun texture to this recipe. Smash some garlic and add that too! There’s no need to make anything perfect here, and that’s the beauty of what makes this dish so simple.
Sprinkle some parsley, avocado oil, and salt and pepper, and mix well. It wouldn’t be Baked Feta and Potatoes without the glorious addition of feta to the middle of the dish. The trick is to cover the feta with some oil so that it doesn’t dry up when it’s baking. This will be cooking at 400 degrees for 20 minutes, and you’ll know it’s done when the potatoes have a slight crisp and the feta is lightly browned.
To serve my Baked Feta Potatoes, mix and mash it all together. To make the perfect bite, make sure that the potato is topped with some of that creamy feta cheese and enjoy!
- 1 /12 pounds Baby Yukon Potatoes
- 3oz feta
- 2½ tbsp. avocado oil
- 4 cloves garlic
- 1oz chopped parsley
- ½ tsp. salt
- ½ tsp. black pepper
- Boil potatoes for 15 minutes, add them to a oven safe baking dish and gently smash them.
- Add smashed garlic, parsley, avocado oil, salt and pepper.
- Mix well and add feta.
- Drizzly a little oil on the feta so it does not dry up when baking.
- Pre-heat oven at 400F Degrees and bake for 20 minutes or until potatoes are slightly crispy and feta is lightly brown.
