Pumpkin Pancakes with Oatmeal

It’s finally Fall and that means Pumpkin everything and that of course includes my Pumpkin Pancakes! I’m obsessed with Fall and even though it’s still Summer weather in California, I’m counting down the days until I can pull out my sweaters, scarves and boots. There is nothing like a hot pumpkin spice latte with my Oatmeal Pumpkin Pancakes. This recipe will be a sure hit for any pumpkin lovers! Pumpkin Oatmeal Pancakes

Pumpkin Pancakes

Ingredients
  • ½ cup pumpkin puree
  • ½ cup wheat flour
  • ½ cup oat flour (or blend oats until until fine)
  • 1 egg
  • 1 tsp. baking powder
  • ½ tsp. cinnamon
  • ½ tsp. nutmeg
  • 1 tbsp. stevia sweetener
  • 1 cup almond milk
  • 1 tbsp. coconut oil
Instructions
  1. Mix all ingredients except coconut milk with a whisk until batter is smooth.
  2. Heat griddle to medium low heat and lightly grease with a little coconut oil.
  3. Drop large spoonfuls of batter and cook until small bubbles form and the outer edges look dry, (about 2-3 minutes on each side.)
  4. Serve with maple syrup
Notes
I topped with a dollop of Greek yogurt and maple syrup. Makes about 6-8 pancakes.
