The secret to making fluffy pumpkin pancakes is to add whip egg whites and fold it in your batter. I’ve tried numerous pumpkin pancake recipes and they are typically more dense because the consistency of pumpkin puree is so creamy it is hard to achieve fluffy pancakes. With adding the extra step in whipping egg whites first it really is a game changer. I definitely recommend a hand mixer for this purpose. You can mixing by had, but I’ve never been able to achieve the fluffy peaks by hand and I give up because my arms get tired. My fluffy pumpkin pancakes has to be one of my favorite recipes for Fall. Nothing says Fall to me than pumpkin pancakes served with some warm maple syrup, a nice cup of hot tea and reading a book by the fire. Try this recipe next time you crave pancakes, you won’t be disappointed!

Ingredients
  • 1 cup milk
  • ⅔ cup pumpkin puree
  • 2 tbsp. coconut oil
  • 1½ cups flour
  • 2 tsp. baking powder
  • ½ tbsp. pumpkin spice mix
  • ½ tsp. salt
  • ⅓ cup egg whites
  • 2 tbsp. butter
Instructions
  1. Mix all dry ingredients in large bowl ( flour, baking powder, pumpkin spice and salt)
  2. Mix all wet ingredients except egg whites (milk, pumpkin puree)
  3. Pour wet ingredients into dry ingredients and mix.
  4. Whisk egg whites until white peaks and then fold into batter.
  5. In large skillet heat to medium heat and melt 1 tbsp. butter
  6. Pour batter into about 1½oz pancakes, cook for about 2 minutes or until batter bubbles and flip. Repeat with remaining batter
