Flourless Banana Muffins
- 2 ripe bananas
- 3 eggs
- 4 tbsp. Milled Flaxseed (I found this at Costco)
- ½ cup almond milk
- 1 tbsp. vanilla extract
- ½ tbsp. cinnamon
- Put all ingredients in large bowl and blend together with masher. (You can also try mixing all ingredients in blender.)
- Spray cupcake tray with Pam or Coconut oil.
- Distribute mixture evenly in tray and bake 375˚ F for 25-30 minutes.
Optional-drizzle a little honey when ready to eat.
