Cast Iron Yam & Eggs

Ingredients
- 1 small yam or sweet potato
- 2 eggs
- ½ cup sliced mushrooms
- 1 green onion stalk chopped
- ½ tbsp. avocado oil
- salt and pepper for taste
Instructions
- Pre-heat oven to 400˚ F degrees.
- Sliced yam .25 inch thick.
- Heat oil medium high heat in cast iron or oven safe pan, add sweet potato. Cook for 1 minutes on each side and add mushrooms. Cook for another minute and crack eggs into pan and sprinkle with green onion, salt and pepper. Place in oven and cook for another 3-4 minutes for over medium eggs.
