Vietnamese Vegetarian Pho

You guys know we make pho at least once a week in my house and I always get request for the recipes. The number one  request is a Vietnamese Vegetarian Pho recipe. I typically make Chicken Pho aka Vietnamese Chicken Noodle Soup, but since I’m trying to eat more plant based I decided to test Vegetarian Pho this go around. I fried tofu to a crispy golden brown, added shiitake mushrooms for a meaty texture and baby bok choy for greens. You can find most of these ingredients at your local Asian market like Ranch 99. If not you can substitute the shiitake mushrooms for mini portabello mushrooms and baby bok choy with broccoli rabe.

Ingredients
  • 1 container of Tofu 14oz
  • 1 packet of dried rice noodle
  • 2 cups sliced Shiitake Mushrooms
  • 4 cups of baby bok choy or broccoli rabe
  • 12-14 cups vegetable stock
  • 4 cloves of garlic
  • 2oz ginger
  • 1oz of star anise
  • ½ onion
  • 1½ tsp. light soy sauce
  • 1 tbsp. sesame oil
  • 1½ tbsp. coconut oil
  • 1½ oz rock sugar
  • ½ tsp. salt
Instructions
  1. Slice tofu into 5 equal segments. With paper towels absorb excess liquid.
  2. In large pan heat coconut oil to medium heat high heat and add sliced tofu and fry for 3-5 minutes on each side until crispy golden brown.
  3. In large stock pot add vegetable stock, star anise, ginger, garlic, onion, salt, rock sugar, light soy sauce and sesame oil. Bring to boil and down to simmer. Allow to simmer for 30 minutes and scoop out all ingredients leaving only clear broth.
  4. In separate pot bring water to boil and dunk rice noodles in for less than 1 minute. Cooks really fast!
  5. Cook shiitake mushrooms and baby bok choy in vegetable stock.
  6. Serve in large soup bowl. Add rice noodle, cooked vegetables, fried tofu and hot broth. Optional- Garnish with Thai basil leave, squeeze some lime juice, add hoisin and sriracha sauce.
