Ultimate Guacamole for Cinco De Mayo

Cinco De Mayo is this weekend and I whipped up my Ultimate Guacamole for you to celebrate. It definitely has a kick with jalapeño and chili flakes, but I added sweet corn for balance. This is perfect or this weekends celebration with friends and family. It will go fast so double up on the recipe if you have more than 6 people at your gathering. I know my husband can eat half of this just to himself.  My Ultimate Guacamole is perfect with tortilla chips, cut up vegetables, on tacos, stuffed in burritos and in your sandwiches. I even spread it on toast like you would do avocado toast. Here are a few health benefits of avocados and why I love them so much. Avocados have more potassium than bananas, loaded with heart healthy fats, contains more than 20 vitamins and minerals, low in sugar and high in fiber.

Ultimate Guacamole for Cinco De Mayo

Ingredients
  • 3 medium avocados
  • 1 jalapeno (diced)
  • ½ cup of corn
  • ⅓ chopped cilantro
  • Juice of ½ a lime
  • ½ tsp. chili flakes
  • 1 tsp. salt
  • 1 tsp. black pepper
Instructions
  1. Cut avocado and remove pit. Scoop out avocado into bowl and mash with a fork. Add remaining ingredients and mix.
