Pumpkin soup, Pumpkin Fritter and Pumpkin Mac and Cheese
 
I made three pumpkin recipes live on my Facebook. I first made Pumpkin Mac and Cheese, then Pumpkin Fritters and Pumpkin Soup.

Ingredients
  • Note: I baked a whole pumpkin and not using canned.
  • Pumpkin Mac and Cheese:
  • 1 cup mashed pumpkin
  • 1 cup shredded cheddar cheese
  • 2 tbsp. butter
  • 1 tbsp. flour
  • ⅓ cup milk
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 3 cups cooked elbow macaroni
  • Pumpkin Fritters:
  • 1 cup mashed pumpkin
  • ⅔ cup corn
  • ½ cup flour
  • 2 tbsp. minced garlic
  • 1 egg
  • ½ tsp. salt
  • ½ black pepper
  • 2 tbsp. olive oil
  • Pumpkin Soup:
  • 2 cups mashed pumpkin
  • 2 cups chicken or vegetable stock
  • 1 cup corn
  • 3 tbsp. olive oil
  • 1 tbsp. minced garlic
  • ½ tsp. salt
  • ½ tsp. black pepper
Instructions
  1. Pumpkin Mac and Cheese:
  2. In large pot melt butter on medium low heat and add stir in flour. Once it clumps together stir in milk. Simmer the milk to warm and add cheese and mashed pumpkin. Stir until cheese is melted and add macaroni into cheese sauce.
  3. Pumpkin Fritters:
  4. Mix all ingredients except oil. Heat oil in large non-stick pan on medium heat and scoop out ⅓ cup mixture. Cook 3 minutes on each side or until golden brown and crispy.
  5. Pumpkin Soup:
  6. Add all ingredients in blender and blend. Pour into pot and heat to medium and simmer for 15 minutes. Add more chicken stock depending on consistency you prefer.
