Cabbage Soup Diet Re-vamped

We all heard about the cabbage soup diet and some of you may have tried it before. My sister in law told me she did it last year and lost 5 pounds from it. I actually haven’t, but I did look up the original diet and recipe.  It seemed so boring and un-filling. So I decided to take the cabbage soup diet and change it up a little bit. I made it more filling, added more veggies, included ginger to spice up the broth and included lentils for protein. Overall, I think my soup is a lot more nutritious than the original. I recommend this soup for a full day as more of a re-boot. Try it for breakfast, lunch, snack and dinner. You’ll feel satisfied and the next day still feel lighter and re-energized. You can also just incorporate the bowl of soup as a side dish as part of your meal. My hubby has a sandwich with his cabbage soup. This soup makes it easy to  get your 3-5 servings of vegetables a day. What ever you don’t finish store in freezer for another time.

Cabbage Soup Diet Revamped
Recipe type: Healthy

  • 1 head of cabbage
  • 1 head of cauliflower
  • 1 small onion
  • 2-3 carrots
  • 1½ cups of corn
  • 2 cups sliced mushrooms
  • ⅔ cup green lentils
  • 2 tbsp. minced garlic
  • 2 oz sliced ginger
  • ¼ cup olive oil
  • 1½ tbsp. salt
  1. In large pot heat oil to medium. Add garlic, chopped onions and sliced carrots. Cook until garlic is golden brown and add mushrooms cooking and gently stirring for another 2-3 minutes. Then add chopped cabbage, chopped cauliflower, sliced ginger, corn, lentils and salt. Add 8-9 cups water and bring to boil. The pot will look really full with the cabbage, but it will wilt down once cooked. No need to add more water unless you think it's necessary after the cabbage cooks down. Turn down heat to medium and let cook for 15-20 minutes. Remove ginger slices when ready to eat.
