Sweet Chili Pineapple Shrimp
My Sweet Chili Pineapple Shrimp recipe is an recipe I shared 2 years ago. I always like pairing seafood with pineapple because it's a little acidic, but also sweet. Most often we squeeze lemon juice over seafood for the acidity, but sometimes I find the sourness is to over bearing. Also, I look to cook pineapple because it changes it's flavor profile to be sweet and savory. Combine it with the kick of the chili peppers and you have sweet, sour, savory and spicy. This Chili Pineapple Shrimp is really one of my favorite recipes and I wanted to bring back to share with you.

  • 1 pound shrimp peeled deveined
  • 1 cup chopped fresh pineapple
  • 1 tbsp. minced garlic1
  • tbsp. sweet chili sauce
  • ¼ cup chopped green onions
  • 1 tsp. fish sauce
  • 1 tbsp. sesame oil
  • Salt and pepper
  1. In hot pan add sesame oil, garlic and green onions. Sauté for a few minutes or until garlic turns slightly brown. Add shrimp and cook for 2-3 minutes and add pineapple, chili sauce, fish sauce and salt and pepper. Cook for another 2-3 minutes. I served with a side of wild organic rice.
