Shrimp Scampi Salad

Ingredients
  • Half-pound shrimp, pealed and deveined
  • ½ tablespoon minced garlic
  • 1 tablespoon chopped parsley
  • ½ tablespoon lemon juice
  • 1 cup Arugula
  • 1 cup Spinach
  • 1 cup Asparagus
  • 2 oz's Beets
  • ⅓ avocado
  • ½ mango
  • 2 Tomatoes
  • 2 Radishes
  • ¼ cup chopped Cilantro
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. In a non-stick pan heat 1 tablespoon olive oil to medium and garlic.
  2. Cook for a minute or until garlic turns slightly golden brown and add shrimp. Cook for another 4-5 minutes gently flipping shrimp around. Add parsley and cook for another 1-2 minutes or until shrimp is full cooked. Squeeze lemon juice and season with salt and pepper.
  3. For quick steamed asparagus, place in bowl with 2 tablespoons water, cover with plastic wrap and microwave 1 ½ minutes
  4. For dressing I blended olive oil, cilantro and lemon. Pinch of salt and pepper for taste.
