Salmon with Nectarine Salsa

For a healthy diet, you should try to incorporate fish at least once a week in your meals. Salmon is one of my favorite go to dinners because I love the taste, but it’s also rich in omega-3 fatty acids and  high in B vitamins. When I make salmon, I try to keep it simple and easy. My Salmon with Nectarine Salsa takes about 20 minutes to make, which is perfect for my busy schedule. Nectarines are in season right now so it’s still super sweet, it pairs perfectly with my baked salmon. Add some baked asparagus and you have healthy low carb dinner.

Serves: 4 salmon fillets
Ingredients
  • 4 salmon filets (6oz each)
  • 1 bunch of asparagus
  • ½ cup diced nectarines
  • ½ cup diced tomatoes
  • ⅓ cup diced onions
  • ¼ cup chopped cilantro
  • 2 tbsp. lemon juice
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • ½ tsp. black pepper
  • 2 tbsp. olive oil
Instructions
  1. Place salmon and asparagus on baking dish. Brush Salmon and Asparagus with 1 tbsp. olive oil and season with 1 tsp. salt, 1 tsp. pepper and 1 tsp. garlic powder. Add 1 tbsp. lemon juice over just the salmon. Pre-heat oven to 400˚ F degrees and bake for 12-15 minutes.
  2. In large bowl mix nectarines, tomatoes, onions, cilantro, remaining lemon juice and salt.
  3. Serve salmon topped with nectarine salsa
