Ingredients
  • Leftover baked turkey (about ⅓ a turkey)
  • 1 tbsp. coriander seeds
  • 1 tbsp. fennel seeds
  • 2 sticks cinnamon
  • 5-6 star anise
  • 1 tbsp. clove
  • 3oz ginger
  • 1 medium onion
  • 4oz rock sugar
  • ¼ cup fish sauce
  • 1 tbsp. salt
  • 1 pound rice noodles
Instructions
  1. In large pot boil 1 to 1½ gallons of water and add Turkey bones and any broth from the bottom of the pan. Cut onion and ginger in half and char over a open flame and add to pot. Toast spices and add into a spice bag and add to pot. Add sugar, fish sauce and salt. Bring to boil and down to medium heat and cook for an hour.
  2. Rehydrate rice noodles by dipping in hot water for 1 minute.
  3. To serve add rice noodles and sliced turkey in to bowl. Garnish with cilantro, green onions, bean sprouts and lime juice. To bring more flavor mix in a tsp. of hoisin sauce and sirarcha sauce.

Turkey Pho or Turkey Vietnamese Noodle Soup has become somewhat a tradition after Thanksgiving in our house. Turkey Pho is great way to make a delicious meal from your leftover Turkey. I know some make turkey pot pie or eat turkey sandwiches for the next few days, but a hot bowl of noodle soup on a cold Fall day sounds so much better to me.
