30 Day Plan to Aid in Weight Loss with High Fiber Low Calorie Meals

Salmon Prawn Muffins

Ingredients:
2 fillets of Salmon
1 pound of Prawns
3 cloves of minced garlic
2 small zucchini
1 cup of broccoli
1 egg
1 tablespoon of Worcestershire sauce
1 tablespoon of fish sauce or soy sauce
½ tablespoon of vinegar
¾ cup whole grain bread crumbs
1 teaspoon of salt
1 teaspoon of pepper

Directions:
In food processor blend zucchini, remove then blend broccoli, remove then blend Salmon, remove then blend prawns. Add all in a large bowl. Mix in the remaining ingredients. In a cupcake pan spray pam and scoop in filling to top. Bake at 375˚ degrees for 30-35 minutes.

Sauce: Pineapple Habanero sauce from Costco, but you can also use any sauce you like. I also had it with store bought sweet and sour sauce. If not, try with just a squeeze of lime

Banana Pops

Ingredients:
2/3-cup dark chocolate chips
¼ cup shaved coconut
¼ cup chopped raw almonds
2 bananas
Popsicle sticks
Styrofoam

Directions:
Place chocolate chips in a glass bowl and put over a pot of boiling water, whisk while the steam from the water melts the chocolate.  Slice bananas in bite size pieces and insert Popsicle sticks, with a spatula or butter knife lightly coat the bananas with the chocolate and sprinkle the coconut and almonds. Insert in Styrofoam and refrigerate 30 minutes. You can also skip the Popsicle sticks and place them on plastic wrap.

Baked Summer Peach with Low Fat Cottage Cheese

Directions: Slice peach in half and remove pit. Sprinkle light brown sugar and bake 350˚ for 10 minutes. Scoop ½ low fat cottage cheese on top, drizzle a teaspoon of honey and a dash of cinnamon.

5 ingredients Orange Ginger Salmon

Ingredients:
2 filet of Salmon 4-6oz each
¼ cup Fresh squeezed orange juice
2 tablespoons low sodium soy sauce
1 teaspoon minced ginger
1 teaspoon minced garlic

Directions:

  1. In a bowl add orange juice, soy sauce, ginger and garlic and mix.
  2. Add Salmon filets sauce and let marinade for at least 30mins no more than an hour
  3. For baking lightly grease aluminum foil and add Salmon filets
  4. Bake at 400˚ for 18-20 minutes
