I have a few healthy rice cake toppings on this blog post, but the possibilities were endless when coming up with concepts. I think we need to give rice cakes more love. Don’t look at it as flavorless cake that you force yourself to eat because it’s only 35 calories a serving, look at it as empty canvass. When a slice of bread is 100 calories and half a bagel is 120 calories, I think rice cakes are a great low calorie substitute. You can top rice cakes with anything you put in your sandwiches or bagel. Here are just a few of my healthy rice cake toppings.
We all heard of or tried avocado toast and it’s one of my go to breakfasts. This time I swapped out the two slices of bread and used rice cakes, topped each one with 1/3 avocado and 1 egg.
Who doesn’t love a bagel with smoked salmon and cream cheese? Well of course I swapped out the high calorie bagel with rice cakes, added light cream cheese, smoked salmon, sliced red onion and chives. I think I lost track of how many of these my husband devoured.
Looking for a nice simple snack? I added hummus, sliced cucumber and red chili flakes to this rice cake.
How about a decadent guilt free dessert? I melted dark chocolate and added sliced strawberries to this rice cake.
Can’t go wrong with some healthy fats on top of healthy fats. I mashed avocado, added tomatoes and sprinkled hemp seeds.
Here is my twist on Almond Joy candy. I made a Almond Joy Rice “Cake” with melted dark chocolate, crushed almonds and shaved coconut.
