Spring is definitely in the air here in California. The trees around our house are starting to bloom with white blossoms and the sun is finally back! After all this rain and floods and feeling bored in our homes we are taking full advantage of the warm weather. If you saw on my Instagram stories, I bought 2 electric scooters for the twins. It works out perfect because they can ride the scooters on the trail by our house and I can get run in next to them. This weekend after my run and a full day of playing outside, I treated us with healthy dessert. Yes, I said healthy dessert!
I made fruit nachos with crispy cinnamon sugar chips, topped with shaved coconut, assorted fruits, nuts and drizzled everything with dark chocolate. It was fun to make and fun to eat. It was also a well deserved treat after being active all day. For the cinnamon sugar chips I used Flatout Flatbread Light Original. Shayna was obsessed with the cinnamon chips and Kiera loved all the fruit toppings drizzled in chocolate. They are always the complete opposite, but it’s funny how twins balance each other out.
The Flatout Flatbread Light Original is only 90 calories per serving and actually has 9 grams of protein and 8 grams of fiber. After a workout, and believe me running around with kids outside is a workout, the best way to refuel is to replenish the body with carbohydrates and repair the body with protein. I had that with the fruit and Flatout flatbread.
We also use the flatbread to make pizza this week and the girls actually made it themselves. They just spread tomato sauce, sprinkle cheese and put in the toaster oven. It’s a serving of pizza for under 200 calories which is pretty amazing considering delivery is so much more in calories and fat. My husband and I also used it in the morning for our breakfast wraps. Just a simple breakfast scramble with eggs, cheese and spinach. We love how it’s so versatile that everyone in the family, big or small can enjoy. I have a feeling the fruit nachos will be a weekly treat for us.

- 2 Slices of Flatout Light Original Flatbread
- 2 tbsp. coconut oil
- ¼ cup shredded coconut
- ½ cup sliced strawberries
- ½ cup blueberries
- 1 kiwi diced
- ⅓ cup melted dark chocolate
- ¼ cup sliced almonds
- 1 tsp. cinnamon
- ½ tbsp. coconut sugar.
- Brush coconut oil over Flatbread and sprinkle with cinnamon and coconut sugar.
- Bake in the oven at 375˚F degrees for 10 minutes.
- Cut into triangle pieces.
- Layer with shredded coconut, strawberries, blueberries and kiwi. Drizzle with dark chocolate and sprinkle with almonds.
