You will fall in love with these fluffy savory vegan coconut macadamia nut pancakes even it you’re not a vegan. I love pancakes because I feel like I’m eating dessert for breakfast. This recipe definitely takes the cake though, because the macadamia nuts and the coconut pair up to give you sweet and salty combo for your tastebuds.

  • 1 cup flour
  • 1 tbsp. coconut sugar
  • 1 tbsp. baking powder
  • ¼ tsp. salt
  • 1 cup coconut milk
  • 1 ½ tbsp. coconut oil
  • 1 tsp. vanilla extract
  • ¼ cup un-sweetened shaved coconut
  • 3 tbsp. chopped macadamia nuts
  • Optional Coconut Syrup instead of Maple
  • Coconut Syrup:
  • Simmer and stir ⅔ cup coconut milk with ½ cup powdered sugar until sauce is thick and creamy
  1. Mix all dry ingredients in one bowl and all wet ingredients in separate bowl. Pour mixed wet ingredients into dry bowl and mix.
  2. Pour about ⅓ cup batter for each serving of pancakes into hot non-stick pan. Cook until top starts to bubble about 1-2 minutes and then flip. Cook for another 1-2 minutes.
  3. Serve with warm maple syrup or coconut syrup.
