- 2 bananans
- 2 tbsp. chia Seeds
- 2 tbsp. honey
- 1¼ cup almond milk
- 1 cup of vanilla yogurt
- ½ granola
- In cup add 2 tbsp. chia seeds and half cup of almond milk. Stir with a spoon and let sit for 5 minutes in refrigerator. The Chia seeds will soak up the milk and expand to a gel consistency. Add the remaining of your almond milk in blender with honey and bananas. Blend until smooth. Pour contents out into a large cup and mix in your chia seed pudding from refrigerator.
- To achieve the same presentation I have in this photo. Use really thin banana slices and press firmly against glass. Then add your yogurt, pour your banana pudding in and top with granola.
My banana Chia Pudding is a perfect balance for breakfast also, not just dessert. Or just look at it as having dessert for breakfast! Thats what I think about when I have pancakes or waffles, but at least my banana chia pudding only seems like an indulgence. So indulge in breakfast without really indulging in breakfast.
